Saanich Peninsula Ham Hock Croquette

Ingredients US Metric
Butter 1 Tbsp + 1 tsp 20 g
Flour 1 Tbsp + 1 tsp 20 g
Ham Stock 1/2 cups + 2 Tbsp 400 ml
Smoked ham hock – Berryman Farms 4.2 oz 120 g
Dijon mustard 1/4  tsp 1 ml
Nutmeg pinch 1/2 g
Lemon 1/2 1/2
Egg (fork beaten) 1 1
Flour 1/2 Tbsp 7 g
Panko breadcrumbs 2 1/2 Tbsp 40 g

Makes approximately 6

Method
  1. Simmer ham hocks just covered in water for 2 hours or until tender
  2. Strip the meat from the bone and reserve the stock
  3. Melt butter and add flour to make roux
  4. Add 400 ml of stock
  5. Add shredded ham hock, Dijon, nutmeg, lemon juice to stock mixture
  6. Portion into cylinder shapes

Ginger Molasses Loaf

Ingredients US Metric
Brown sugar 1/2 cup + 2 Tbsp 150 ml
Butter 1/2 cup + 1 Tbsp 135 g
Egg 1 1
Orange zest 1 Tbsp 15 ml
Molasses 4 Tbsp 60 ml
Salt 1/4 tsp 1 ml
Nutmeg 1/2 tsp 2.5 ml
Ground ginger 1 tsp 5 ml
Ground cinnamon 1 tsp 5 ml
Cloves 1/4 tsp 1 ml
Baking soda 1 tsp 5 ml
Flour 1 1/2 cups 265 g

 

Method
  1. Cream butter and sugar together
  2. Whisk egg and gradually add to the creaming butter and sugar mixture
  3. Add orange zest and cream until light coloured and fluffy
  4. Add salt, molasses and all spices and mix until well combined
  5. Add flour and fold until well combined
  6. Portion into loaf pans and bake in a 350°F oven 35-45 mins
  7. While baking prepare ginger glaze and once cakes are out of the oven paint the hot glaze onto still warm cakes
  8. Chill and serve

 

Ginger Glaze

Ingredients US Metric
Simple syrup* 3 1/2 Tbsp 50 ml
Canadian Rye Whiskey 2 1/2  Tbsp 37.5 ml
Candied ginger (finely chopped) 3 1/2 Tbsp 50 g
Water 5 tsp 25 ml
Method
  1. Combine all ingredients
  2. Bring to a boil
  3. Lower heat and simmer 2-3 mins
  4. Use hot, or cool and store refrigerated and reheat for later use

 

*Simple Syrup

Ingredients US Metric
Water 1 cup 250 ml
Sugar 1 cup 250 ml

 

Method
  1. Combine all ingredients
  2. Bring to a boil
  3. Lower heat and simmer 2-3 mins
  4. Use hot or cool and store refrigerated and reheat for later use
